OVERBROOK — Aaron Higbie left Williamsburg and went to Kansas State University, where he was a member of the national championship meat judging team. He parlayed his experience into ownership of Santa Fe Trail Meats in Overbrook. Higbie was recently highlighted on the Huck Boyd Rural Development Institute. The institute said Higbie is a model as someone who’s been able to prosper in small-town and rural Kansas. He has succeeded in Overbrook by finding his niche, custom processing cattle, deer and elk. The institute said Higbie’s success is shared through the area both by his buying locally and by supporting community groups.
