WASHINGTON — Although more people are eating out less, they still want that fancy-restaurant taste for their home-cooked meals. And they’ve been watching all those cooking shows on TV. Many ambitious chefs are cooking with alcohol to get that hoity-toity taste loved by the TV chefs. However, because of health or religious reasons, that families want the taste without alcohol, said Colorado State University food expert Shirley Perryman. There are alternatives, especially for sweet recipes or desserts, when the chef can use a variety of fruit juices or orange zest, she said. Chefs can also use meat broths, vinegar or non-alcohol extracts to get the about same taste.
