According to market research, sales of beef products are going up, despite rising prices due to herd thinning. The Kansas Livestock Association, Kansans are willing to buy beef at a higher price if it meets their quality standards. Carlet Madinger with the Kansas Beef Association:

There is a push to buy beef from smaller local butcher shops, figuring if they are going to pay a high price, they might as well get it local and higher quality. Kansas beef cattle farming and ranching have a direct output of around $12 billion and employ nearly 40,000 Kansans. Tell me this doesn’t get your mouth watering…
