WASHINGTON — Federal regulators say a nationwide egg recall linked to a salmonella outbreak will likely expand. The U.S. egg industry has become so concentrated that two or three corporate egg farms supply most of the nation’s eggs. More than a half billion eggs have been recalled already from two egg farms in Iowa. ABC News reports regulators have been trying to unravel a complicated network of egg distributors, wholesalers and food service companies across the country. More than 100 people in 17 states have suffered from salmonella because of the eggs. Meanwhile, ABC reports that many some consumers are looking to buy “farm fresh” from local organic egg producers. One New York farm reports that eggs laid by several dozen free-range hens sell out in minutes.
