MANHATTAN — The recent salmonella outbreak and subsequent bad publicity about the treatment of chickens at the giant corporate farms in Iowa that spawned the outbreak bodes ill for Kansas cattle. A new study co-authored by K-state livestock economist Glynn Tonsor shows there’s a direct link between news coverage about animal welfare issue and Americans’ lower consumption of all meat. Although the publicity concerns chicken, there’s little switch to pork or beef; people turn to non-meat food, the study indicates. Tonsor said his study indicates the best approach is to try to regain consumer trust collectively rather than try to profit at the expense of other meats.
