You might think of morel mushroom season as spring time and early summer, but, did you know that there is a fall season and it could be taking off at any moment. Along with them, a wide variety of edible mushrooms like puffballs, oysters, lion’s mane and chicken of the woods. Lion’s mane is one of the most recognizable. It grows in clusters on hardwood trees and earned its obvious namesake from a resemblance to a lion’s shaggy mane. They should be eaten when they are still white in color. Chicken of the woods got their name because…you guessed it, people say they taste like chicken. They grow in large clusters on trees and are rubbery and have a yellow to orange body.

Expert hunters say before eating anything you find, have them checked to see that they are actually safe and edible, and make sure they are cooked thoroughly. In other words, if you don’t know what it is, don’t eat it.
