Memorial Day cook outs are a big thing around here and some people try to get a jump on things and have time, by cooking the meat halfway then finishing it on the grill the day of the event; but, is that such a good idea? Meridith Carothers of the Meat and Poultry Hotline, says probably not, as you are entering a ‘danger zone’:
She suggests that a better idea would be to completely cook the meat the night before, then sear and warm it on the grill the next day.
